Ingredients

1 tbsp. olive oil

1 chopped yellow onion

1 chopped shallot

5 cloves of garlic

Red pepper flakes

Bay leaf

1 package brown lentils

1 container chicken broth

Black pepper

1 box whole wheat pasta

1 bag fresh spinach

Oregano

Rosemary

Sage

Thyme

Parsley

Black pepper

Parmesan cheese

Feta cheese

Preparation

Heat oil 1 min. Add onion, shallot, garlic, pepper flakes, and bay leaf. Cook on low for 20 minutes and remove leaf.

While onion is cooking, cook lentils in chicken broth in a large stockpot according to package instructions. Top with black pepper.

Cook pasta according to instructions.

Add onion mixture and pasta to lentils. Stir in herbs and pepper. Serve topped with parmesan and pepper.
