Ingredients
Frozen salmon or salmon like fish- 1-2#
Coconut milk- 1 can full fat
Greens, either frozen chopped spinach, or any other hearty green will work- alot (2-4 cups chopped)
Coconut aminos or soy sauce- 1-2 tbs
Dijon mustard- 1 tbs
Curry powder- ½ tsp
Salt
Pepper
Preparation
Simmer all ingredients except fish. Add fish and cook each side about 8 mins until cooked through. Careful not to overcook! Keep spooning the mixture on fish as it cooks.
NOTE- If you prefer, you can put the greens in after the first 8 mins. I did this with fresh swiss chard put in at beginning. It was great, but the leaves could have gone in a bit later. Frozen greens should go in at the beginning
