Simple Apple Salad by Linda McFadden

Ingredients:

Easily vary amounts. Can be quick salad for one,

or stress-free side for large party.

Apples, chopped, unpeeled if skin isn’t tough

Celery, chopped

Raisins or dried cranberries

Equal parts sour cream and mayonnaise to lightly coat

Plain yogurt (to substitute for sour cream and mayonnaise)

Honey to taste, or sugar (start with 1 tsp) to taste

Squeeze of lemon

Directions:

Combine apples, celery, and dried cranberries, or raisins in large bowl.

Whisk sour cream, mayonnaise, honey (or sugar) to taste, and squeeze of lemon.

Incorporate with other ingredients.

Stir gently.

Serve as side salad, or even light main dish.
