Ingredients

8 oz linguini

4 oz Nuefchatel cheese

1T olive oil

2T lemon juice - use more!

2T lemon zest

1/2 to 1 cup parsley

Preparation

Cook pasta. Reserve 1 cup of pasta water.

Heat cheese, olive oil, lemon and lemon zest over low and stir until melted. Add 1/2 cup (or so) of pasta water. Season with salt and pepper.

Mix sauce with pasta and parsley.
