Ingredients

1/2 cup olive oil

2/3 cup chopped white onion

12 serrano chili

6 habanero chilis

2 large green peppers

2 whole garlic bulbs

2 pounds of chicken

3 Tablespoons of chili powder

4 Tablespoons of of tomato paste

4 Tablespoons ground cumin

2 Tablespoons dried oregano

60oz white beans (30 oz drained)

60oz diced tomatoes in juice

1 cup fresh cilantro

Preparation

  • Hear oil in large, heavy pot
  • Add all the veggies and cook/stir until soft
  • Add chicken o Cook till lightly browned
  • Add spices and tomato paste
  • Add beans
  • Add to diced tomatoes
  • Let simmer for 90-120 mins
  • Taste chicken to make sure its finished
