Ingredients
4 large eggs
2/3 cup sugar
1/2 teaspoon salt
1/4 teaspoon nutmeg
2-2/3 cups milk (or may use half cream)
1 teaspoon vanilla extract
1 9" unbaked pie crust
Preparation
Preheat oven to 450 degrees.
Beat together the 4 eggs, add the remaining ingredients and beat until well combined. Pour into prepared pie crust and bake for 15 minutes. Lower oven temperature to 350 degrees, bake an additional 20 minutes or until a knife inserted along the side of the pie comes out clean. The center will not be quite set, but will firm as the pie cools. Overcooking will make the pie watery.
Cool and refrigerate until set.
