Ingredients
2 pork chops
9 large slices of bacon
1 large purple onion, julianned
2 cups dried apricots
1 cup brown sugar
1 c Maker’s 46 Bourbon
2 cups apricot preserves
1 cup maple syrup
Preparation
Cook pork chops to 145˚F cut bacon to 1 inch pieces and cook. When bacon starts browning, add onions and apricots. Add brown sugar and bourbon to pork chops and simmer until alcohol has cooked down. Add preserves and maple syrup to bacon pan. Cook and serve on top of pork chops.
