Ingredients
Cake:
1 1/4 cups cooking oil (I use canola)
2 cups sugar
3 cups flour
1 t. salt
1 t. baking soda
1 cup pecans, chopped
3 cups chopped, peeled apples (recommend Granny Smith or Pippen)
3 eggs
Glaze:
1 stick of butter
1 cup brown sugar
1/4 cup canned, evaporated milk
1 t. vanilla
Preparation
Set oven to 350F butter and flour bundt or tube pan
sift flour, salt & soda mix cooking oil and sugar until well creamed and fluffy add eggs one at a time
mix apples and pecans with 1/2 cup of flour mixture
add remainder of flour mixture to sugar/egg mixture, a third at a time
add apple/pecan mixture to the batter, stir in well
put cake batter into the prepared pan, bake for 1 hour, check cake and if needed, bake for another 10 minutes. (non-convection oven time – adjust your baking time if you have a convection oven)
Allow to cool, remove from pan
Prepare glaze: melt butter add evaporated milk, bring to boil boil for at least one minute (I did this on a low boil) add brown sugar & vanilla stir really well over low to medium/low heat until mixture thickens and sugar is fully dissolved (tip: never scrape the sugar off the sides of the pan as this will crystallize the entire batch) Let cool a bit, and ice cake
