Ingredients

2 tablespoons of canola oil

1 small onion - diced

2 cloves of garlic - smashed and chopped

2 or 3 ripe mangos - peeled and pit removed - diced

1 hot chili (Ghost, Jalapeno, or any hot chili) - chopped

1 orange - peeled and seeds removed - diced

2 or 3 tablespoons of honey

3/4 cup white vinegar

1/4 cup cider vinegar

1 cup water

Preparation

Heat oil in a medium saucepan over medium heat. Add onions and cook until soft. Add the garlic and cook for 30 seconds. Add the mango, orange, chili, and 1 cup of water. Simmer and stir for about 10 minutes. Add the honey and vinegars and cook until the sauce thickens - 10 to 15 minutes. Using a hand blender or any blender blend until smooth. Strain through a fine sieve. Season with a little salt to taste.
