Ingredients

1 cup dried apricots, chopped

½ cup water

½ cup apple cider vinegar

¾ cup granulated sugar

1 8-oz. can tomato sauce

1 small onion, chopped

2 cloves of garlic, chopped

1 canned chipotle pepper in adobo

1 Tbsp. adobo (more or less depending on preference)

Salt and pepper to taste

Preparation

Place apricots, water, vinegar and sugar in a saucepan. Bring to a slow boil; then reduce heat, cover and simmer for 30 minutes or until apricots are soft. Add remaining ingredients. Return to simmer for 1 more hour, until onions and apricots are very soft. Carefully pour sauce into a blender or food processer and blend until smooth. Return to saucepan and simmer until desired thickness, if necessary. Season with salt and pepper to taste.
