Ingredients
1/2 cup butter
1 cup sugar
2 cups flour unsifted
2 large eggs
1/2 cup milk
2 tsp baking powder
1/2 tsp salt
2 1/2 cups blueberries (or berry of your choice)
2 tsp sugar (for the top)
1 tsp vanilla
Preparation
Cream butter and sugar ’till fluffy. Add eggs one at a time. Mix ’till blended. Sift dry ingredients together and add alternately with milk and vanilla. Add berries and stir in by hand. Grease muffin tins well (including top surfaces) with butter. Pile mix high in each muffin cup. Sprinkle sugar over tops. Bake @ 375 F for 30 min. Cool in pan at least 30 min.
