Ingredients

1 cup Quinoa

1/2 cup Panko bread crumbs - optional

1/2 cup Flour

1/2 cup Corn meal - coarse

1 1/2 teaspoons Baking powder

1/2 teaspoon Cayenne

2 cups Shredded cheddar - sharp

1 pound Pork breakfast sausage

1/2 cup Onion - finely minced

Preparation

Cook quinoa in 2 c water uncovered. Do not overcook. Drain water remaining when quinoa tastes done. Let cool.

Mix together panko, flour, corn meal, baking powder, cayenne in large bowl.

Add cooled quinoa and shredded cheese to dry ingredients in bowl.

Add sausage and onion to bowl. Mix by hand. Do not overmix.

Form into 1" balls. Place balls on parchment paper on baking sheet 1/2" apart.

Bake 400 F until brown, 25 minutes.
