Ingredients

3 eggs

1 cup sugar

2/3 cup pumpkin

1 t. lemon juice

3/4 cup flour

1 t. baking powder

1/2 t. salt

2 tbs of Pumpkin Pie spice

1/2 cup chopped nuts

confectioners sugar

1 1/4 cup powdered sugar

8 oz cream cheese

5 T. margarine

1/2 t. vanilla

Preparation

Beat eggs 5 minutes or longer high speed. Gradually beat in sugar, add pumpkin and lemon juice, mix well. Sift together dry ingredients and add to pumpkin mixture. Spread out on greased 11 x 14 inch cookie sheet. Spread on nuts and bake at 375 for 12 - 15 minutes. Spread out paper towels and sprinkle on powdered sugar. Roll up cake in towels until completely cooled.

Filling: 1 1/4 cup powdered sugar, 8 oz cream cheese, 5 T. margarine, 1/2 t. vanilla, mix unroll cake and spread on filling. Roll up again without towel wrap in wax paper and refrigerate.
