Ingredients

2 Big Potatoes, Boiled and Peeled

2 Tbsp Oil

1 Tsp Mustard Seeds

1 Tsp Cumin Seeds

1 Tsp Roasted Fennel Seeds

10 Curry Leaves

1/2 Tsp Asafoetida

1 Medium Onion,finely chopped

1 Medium Tomato,finely chopped

2 Tbsp Ginger-Garlic-Green Chili paste

1/2 Tsp Turmeric Powder

1/2 Tsp Red Chili Powder

1 Tsp Kitchen King Masala Powder

1/2 Tsp Garam Masala Powder

1/2 Cup Water or as per your need.

1/4 Tsp Sugar

Cilantro

Salt as per taste

Preparation

Roughly crush the potatoes. Works best with Mortar and Pestle or Vegetable Masher. In a pan, add oil. When its slightly warm,add asafoetida,mustard seeds,cumin seeds,fennel seeds,curry leaves. When the mustard seeds flutter, add ginger-garlic-green chili paste. Stir for a while. Add onion and tomatoes. Cook for a while. Add potato chunks. Stir again. Add Salt and sugar. Add all the masala powders and mix well. Add water. Stir once. Cover and cook for 5 mins. Finally garnish with cilantro and serve with hot puri or roti.
