Recipe for out of date milk:
Mato (accent on second syllable):
1 gallon milk
1 c. lemon or lime juice/vinegar/artichoke juice(!)
2 t. salt
Preparation
Bring milk to a boil and then turn it off. Right away, add coagulant and salt, stir a couple of times, then cover and let it rest 15 minutes. Put a piece of cheesecloth or very clean kitchen towel in a sieve or colander, in a large pot. Spoon the curds into the cloth to drain. Gently pour the left liquid over, so as to get all the bits.
- if it hasn’t curdled enough - the liquid is still cloudy- bring it to a gentle boil again. Half-curdled milk goes right through the cloth and you have no mato.
Eat with fruit for esmorzar (breakfast) or berenar (afternoon snack).
