Ingredients

5 pieces Over ripe bananas

1/4 cup Melted coconut oil

1/2 cup Honey

3 tablespoons Sour Cream

1.5 cups White whole wheat flour

1 Egg (beaten)

1/4 teaspoon Salt

1.25 teaspoons Baking soda

1 tablespoon Butter (for pan)

Preparation

Mash up the banana in a large mixing bowl

Add the melted coconut mixing up well, scraping the sides as the coconut solidifies

Add all other the ingredients, saving the flour til the end.

Put mix in a buttered aluminum baking tray

Bake on 350 for 1 hour

Check to make sure that the top is not a gooey mess, then remove and let cool.
