Ingredients

1 tsp. dried Basil Leaves

1 tsp. Garlic Powder

1/2 tsp. dried Oregano Leaves

1/2 tsp. McCormick® Gourmet Collection Rosemary, Crushed

1/2 tsp. McCormick® Gourmet Collection Sicilian Sea Salt

4 salmon fillets, skin on (4 ounces each)

1 tbsp. plus 2 tsps. olive oil, divided

2 tbsp. sugar

1 medium fennel bulb, cored and thinly sliced

1 cup cherry tomatoes

Lemon wedges

Preparation

1- Mix seasonings in medium bowl. Sprinkle 2 teaspoons over salmon. Reserve remaining seasoning mixture in bowl. Set aside. 2- Heat 1 tablespoon of the oil in large skillet on medium high heat. 3- Place salmon, skin side up, in skillet. Cook 5 minutes. 4- Meanwhile, add sugar and remaining 2 teaspoons oil to reserved seasoning mixture; mix well. Add fennel and tomatoes; toss to coat. Turn salmon fillets. Place fennel mixture around salmon in skillet. Cook 6 minutes or until fish flakes easily with a fork. Serve with lemon wedges.
