Ingredients

3 cups cooked quinoa

1/4 cup olive oil

3 Tbsp fresh dill

3 Tbsp capers

2 Tbsp lemon juice

1 Tbsp lemon zest

3 Tbsp toasted pin nuts or almonds

3 cloves minced garlic

2 Tbsp finely minced leek or green onion

salt and pepper to taste

Preparation

Hand-toss all ingredients. Serve warm or chilled.
