Ingredients
1 cup cake flour
2 eggs (separated)
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 Tbs brown sugar
2 Tbs melted butter
1 cup buttermilk
1/4 tsp real vanilla
Pure Maple syrup
Preparation
Combine dry ingredients, seperate yolks and white, whip whites till just forming slight peak. Add buttermilk, vanilla, melted butter and yolks to dry ingredients. Mix until batter is formed. Fold in egg whites. Use tab of butter on med. hot griddle and ladle 1/2 cup spoons on griddle in middle of melted fat. Add any fruits you desire. top with pad of butter and pure maple syrup. Now THIS is a pancake!
