Ingredients
2 cups baby or young, small carrots
2 tbsp. light brown sugar
1-2 tbsp. Butter, melted
1 tbsp. miso paste
1 tbsp. low sodium soy sauce
1/8 tsp. ground ginger
Preparation
Mix all ingredients together and toss with carrots (I use the fancy baby carrots). Place on a baking sheet covered with parchment paper. Bake at 375 for 30 minutes. Can roast or broil to added char.
