Ingredients

3/4 c. rice

3/4 tsp salt

2 Tbsp olive oil

1 Large shallot chopped

2 garlic cloves chopped

1/4 cup cranberries

1/4 cup chopped apricots

1/4 cup raisins

3/4 tsp ground coriander

1/3 cup chopped pistachios

3 Tbsp fresh chopped cilantro

Preparation

Heat oil in saute pan Saute shallot and garlic 2 minutes Saute dried fruit 2 minutes with coriander Add rice saute 1 more minute Transfer to rice cooker and 1 1/2 cups water with salt and cook according to directions. Transfer to serving bowl and garnish with pistachios and cilantro and serve.
