Ingredients

1 Yellow onion

28 ounces Diced tomatoes, drained

4 cups Chicken broth

2 cups White corn

2 cups Corn tortilla chips

1 Avocado

1 package Sour cream

1 bundle Cilantro

12 ounces Chicken

2 cloves Garlic

1/4 teaspoon Chicken bullion

1/4 teaspoon Mexican Oregano

2 tablespoons Oil

1/8 teaspoon Paprika

1 tablespoon Onion powder

1 tablespoon Garlic powder

1/2 cup Pickled red onions

1 pinch Salt and pepper

1 bunch Green onions

Preparation

Saute onion and garlic for 5-7 minutes. Add tomatoes and saute for 4 minutes. Next, add broth and bring to a boil and then simmer 20 minutes before adding chips. Puree 2 cups of the mixture in a blender, then recombine it with the rest in the pot. Finally, add the corn and top with your choice of tortilla stips, avocado, sour cream, cilantro, and pickled onions.
