Ingredients

1 ½ cups all purpose flour 2/3 cup oil

1 cup sugar 2 eggs

1 tsp baking soda 1 cup finely shredded raw carrots

1 tsp ground cinnamon ½ cup crushed pineapple w/syrup

½ tsp salt 1 tsp vanilla

Icing:

2 ½ cups confectioners sugar 1 4 oz package of cream cheese

4 tbls soft butter 1 tsp vanilla

½ cup pecans, chopped dash of salt

Preparation

In large bowl, mix dry ingredients. Add oil, eggs, carrots, pineapple and vanilla. Beat with electric mixer 2 minutes. Pour into two greased and floured 8 x 2 inch pans. Bake 35 minutes at 350°.
