Ingredients
3 pounds Chicken Breast and Thighs
2 bags 2 baked cornbreads (crumbled)
3 stalks 3 stalks chopped celery
4 pieces Eggs
7 pieces Hard Boiled Egg
1 bunches 1 bunch green onion
2 sticks 2 sticks margarine
Preparation
Bake 2 cornbreads according to directions. This can be done ahead of time and frozen. Boil and debone chicken. Reserve broth. Sauté celery and onion in 2 sticks of margarine. In a large mixing bow., mix cornbreads, celery, onion, chicken, and 4 eggs. Add broth so mixture is mushy. Stir in chopped boiled eggs and chopped green onions. You may need to add more broth. Cover and bake at 400 degrees for 1 hour. Check to see if broth is absorbed. Continue to bake for 30 minutes more. If needed, remove foil and brown.
