Ingredients

DRY:

1 1/2C of cornmeal

2C flour - can be 1C white and 1C whole wheat pastry, I use all white

1T baking powder

1t baking soda

1t salt

WET:

2C buttermilk or plain yogurt

1/2C milk

1/4C sweetening or sugar, I cut way down

2 eggs, beaten

1/4C melted butter cooled

Preparation

Preheat oven to 350 and butter 12" cast iron skillet

  1. sift or whisk dry ingredients in large bowl to combine
  2. combine wet ingredients in small bowl and stir to combine
  3. pour wet ingredient mixture into the dry and stir until just combined, a few lumps are fine.
  4. pour into buttered skillet and bake for 25-30 minutes until the edges start to pull away from the sides of the pan
