Ingredients
DRY:
1 1/2C of cornmeal
2C flour - can be 1C white and 1C whole wheat pastry, I use all white
1T baking powder
1t baking soda
1t salt
WET:
2C buttermilk or plain yogurt
1/2C milk
1/4C sweetening or sugar, I cut way down
2 eggs, beaten
1/4C melted butter cooled
Preparation
Preheat oven to 350 and butter 12" cast iron skillet
- sift or whisk dry ingredients in large bowl to combine
- combine wet ingredients in small bowl and stir to combine
- pour wet ingredient mixture into the dry and stir until just combined, a few lumps are fine.
- pour into buttered skillet and bake for 25-30 minutes until the edges start to pull away from the sides of the pan
