Ingredients
4 cups large flake oats
1 cup each of some combination of seeds and nuts:
cashew pieces
sunflower seeds
almonds (whole, chopped or slivered)
pumpkin seeds
1/2 c sesame seeds
1/2 cup oil (safflower, grapeseed, coconut)
1/2 cup sweetener: maple syrup, honey, agave
ADD AFTER BAKING: 1 cup each of one or more dried fruits - raisins, chopped apricots, cherries
Preparation
Mix all ingredients together except for dried fruit.
Line large baking pan with Silpat or parchment paper. Preheat convection oven to 325’ F Spread mixture evenly on pan.
Bake on middle rack for approx. 25 minutes. Turn with spatula, and continue baking for a few minutes until lightly browned.
Add 2 cups dried fruit and stir into granola.
Leave in warm oven for about 10 more minutes. Let cool.
Store in glass container.
