Ingredients

1x 12oz package of no-boil lasagna noodles

2x 28oz cans of toms, diced and in juices

2x garlic cloves, minced

1x bunch parsley (or 1T dried)

1x bunch basil (or 1T dried)

2t oregano, dried

1/2t sugar

3/4t pepper

1.5t salt

1/2C olive oil

2lbs ricotta

3x eggs

3/4 Parmesan

6C mozzarella, shredded

Preparation

  1. heat oven to 375
  2. heat oil in a 5qt. pot
  3. add garlic and fry until fragrant
  4. add toms and juice
  5. add sugar, salt, pep, dried herbs and simmer until thickened, 20-30 minutes RICOTTA: add ricotta to large bowl. add eggs, 1/4C parm, basil (fresh) and pars. (fresh) LAYER: sauce / pasta / ricotta / mozz sauce / pasta / ricotta / mozz BAKE: bake in middle rack at 375 for 25 minutes covered with foil. remove foil and bake for 10 more minutes. let rest 15 minutes before serving
