Ingredients

2lbs Tofu, cut into 1" cubes

1C soy sauce

1/4C sesame oil

2" piece ginger, minced

1 bunch scallions

1/2C vegetable oil

1 head broccoli, cut into pieces

1lb green beans

1/2lb snow peas

2x red bell peppers

3x carrots

Preparation

  1. Put tofu into bowl and cover with soy sauce and sesame oil. Then add 1/2 ginger and scallions and stir to combine.
  2. add veg oil to hot pan and warm
  3. Add ginger then remove
  4. Add broccoli then remove
  5. Add carrots then remove
  6. Add Green Beans then remove
  7. Add snow peas then remove
  8. Combine all ingredients and warm through, adding additional garlic and scallions to top.
  9. serve with steamed rice.
