Ingredients
2lbs Tofu, cut into 1" cubes
1C soy sauce
1/4C sesame oil
2" piece ginger, minced
1 bunch scallions
1/2C vegetable oil
1 head broccoli, cut into pieces
1lb green beans
1/2lb snow peas
2x red bell peppers
3x carrots
Preparation
- Put tofu into bowl and cover with soy sauce and sesame oil. Then add 1/2 ginger and scallions and stir to combine.
- add veg oil to hot pan and warm
- Add ginger then remove
- Add broccoli then remove
- Add carrots then remove
- Add Green Beans then remove
- Add snow peas then remove
- Combine all ingredients and warm through, adding additional garlic and scallions to top.
- serve with steamed rice.
