Ingredients

4 large sweet potatos (@ 2 pounds), get the dark orange moist kind, may be called yams

1 lb carrots

1/2 to 1 stick butter (1 is a LOT) to taste

1/2C sour cream

dash nutmeg

dash cayenne pepper

Preparation

  1. bake potatoes at 375 for @ 1 hour, or until tender when pierced by fork
  2. peel and trim carrots then cut into 1" lengths
  3. cover with water and a bit of sugar and simmer until fork tender
  4. after potatoes have cooled, scrape out flesh and combine with carrots in bowl of food processor fitted with steel blade
  5. puree in batches, adding some of the butter and sour cream to each batch, remembering to add nutmeg, salt and peeper to taste
  6. reheat in mircowave or an oven cover with foil at 350 for 25 minutes
