Ingredients

4 Bananas

2 cups Whole Wheat Flour

1 tsp baking soda

1/2 cup shortening

1 cup sugar

2 eggs

1 tsp salt

1 tsp vanilla

1/2 cup sour cream

Preparation

Preheat the oven to 350 degrees. Cut 4 bananas into pieces, and mash. Mix together 2 cups of whole-wheat flour and 1 teaspoon of baking soda. In another bowl, mix together 1/2 cup of shortening and 1 cup of sugar. Beat until creamy. Add 2 large eggs, the mashed bananas, 1 teaspoon of salt, and 1 teaspoon of vanilla. Mix well. Add the flour mixture and 1/2 cup of sour cream. Mix well. Fill the muffin cups 1/2 full. Bake for 15-18 minutes.
