Ingredients

1 1/2 C. flour

1 (3.4 oz) vanilla pudding mix

1 tsp. baking soda

1/2 tsp. salt

1 stick of butter, softened

1/2 C. peanut butter

2/3 C. brown sugar

1/2 C. white sugar

2 eggs

2 tsp. vanilla

1/2 C. quick cooking oats

1 C. mini M&Ms

1/2 C. peanut butter chips

1/2 C. chocolate chips (I used milk chocolate)

Preparation

Preheat oven to 350 degrees.

In a medium bowl, combine flour, baking soda, salt, and vanilla pudding mix. Set aside. In the bowl of a stand mixer, fitted with paddle attachment, cream together (on medium speed) butter, peanut butter, and sugars until light & fluffy (about 5 minutes). Then add eggs and vanilla. Reduce to low speed and add dry mixture. Combine until just incorporated. Add oats, M&Ms, peanut butter chips, and chocolate chips. The batter should be thick.

Line cookie sheet with aluminum foil, parchment, or a baking mat. Add 2 Tbsp. scoop and space 2 inches apart on cookie sheet. Bake for 11 minutes at 350 degrees. Let cool for 5 minutes before transferring to cooling wrack.
