Ingredients
3/4 cup butter, melted
1 cup dark brown sugar
1 egg
1/4 cup dark molasses
1/2 tsp salt
2 cups all purpose flour
2 tsp baking soda
2 tsp cinnamon
1 tsp ground ginger
1 tsp ground cloves
Raw sugar for rolling cookies
Preparation
- In a mixing bowl, add the sugar to the melted butter and beat until well mixed.
- Beat in the egg and molasses.
- Sift together dry ingredients.
- Add dry ingredients to butter molasses mixture gradually and beat until well combined.
- Chill at least 1-2 hours.
- Preheat oven to 375 degrees F.
- Roll the chilled cookie dough into small walnut-sized balls. Roll the balls in the raw sugar and place 3 inches apart on greased or nonstick baking sheets.
- Bake until set and just beginning to brown on edges, about 8-10 minutes. *Cook until tops are cracked all over, but still a bit gooey in center. *Do not overbake !!
- Cool for 2-3 minutes on baking sheet, then transfer to a wire rack to cool completely.
