Ingredients

2 1/4 cups AP flour

2 1/4 t salt

2 1/4 t BP

3 1/2 t BS

1/2 cup + 2T sugar

2 1/4 cups whole wheat flour

1 cup + 2T cornmeal

1 cup + 2T Soy flour or oat bran

Preparation

  1. In a large bowl sift AP flour, salt, BP, BS and sugar. Whisk in whole wheat flour, cornmeal and bran.

  2. To use, make pancakes with 2 1/2 cup dry mixture, 1 egg, 3 cups buttermilk or plain yogurt and 3 T melted butter. Each batch yields 12 pancakes.
