Ingredients

1 cup AP flour

1/4 t BS

1 1/2 t BP

1T sugar

1/2 t salt

1 cup whole wheat flour

2 egg yolks

1 1/4 cups buttermilk

6 T melted butter

2 egg whites

Preparation

  1. In a large bowl sift together AP flour, BS, BP, sugar and salt. Whisk in whole wheat flour.

  2. In a medium bowl whisk egg yolks till light. Add and whisk buttermilk and melted butter.

  3. Combine wet and dry ingredients and fold together.

  4. In bowl of a mixer, beat egg whites until stiff but not dry. Fold whites into batter.

  5. On preheated waffle iron, pour 1/4 measures of batter and cook till golden.
