Ingredients

5 # pork butt or shoulder roast

2 medium onions chopped

3 cloves garlic minced

2 T chili powder

1 T cumin

2 t smoked paprika

1 t cayenne

salt and pepper to taste

Sauce:

1/2 c ketchup

2 T whole grain Dijon

3T Worchestershire

1/3 c dk brn sugar

1 T liquid smoke

12 oz beer

Preparation

Combine spices and mix. Rub spices on pork roast generously Put roast in bottom of crock pot on high. Put onions and garlic on top and pour beer over all. Cook 1 hour on high and all day or overnight on simmer. Remove pork and shred. Add Sauce ingredients to pot juices, taste, correct, and boil until reduced. Add pork back in and serve on buns with additional fried onions if desired.
