Ingredients

1/2 cup AP flour

1/2 t salt

1/2 t BP

3/4 t BS

1/2 cup whole wheat flour

1/4 cup cornmeal

1/4 cup soy flour or bran

2 T honey

1 egg

2 cups buttermilk or yogurt with fruit

2 T melted butter

Preparation

  1. In a large bowl sift together AP flour, salt, BP and BS. Stir in whole wheat flour, cornmeal and soy flour or bran.

  2. In a separate medium bowl combine honey, egg, buttermilk and melted butter.

  3. Quickly combine the dry and liquid ingredients, not necessary to be completely smooth. On a very hot griddle pour 1/3 cup measures of batter and cook till bubbles appear on the surface. Turn until pancakes are cooked through.
