2T olive oil, 1 onion finely chopped, 1 carrot finely chopped, 1 celery stick finely chopped, 1lb very ripe tomatoes chopped, 2T chopped fresh parsley, 2t sugar PREPARATION***** Heat oil and add onion/carrot/celery and cook on low for 10min. Add tomatoes to vegetables with parsley/sugar and 1/2c water. Bring to boil, reduce to low, simmer for 45min. Season with salt and pepper to taste.
