Ingredients

1 T oil or bacon drippings

1 lb. Chpd smoked chicken

1/4 C coarsely chpd white onion

1/4 C chpd green chiles

2 cloves garlic, sliced

1 t chili pwd

1 T cornstarch

1 1/2 tsp. dried oregano

1/5 tsp. gr. cumin

1/2 tsp salt

1/2 tsp blk pepper

1 Can (14 1/2 oz) diced tomatoes

1 Can (14 oz.) white hominy

1 C chicken broth

2 whole Chipotle peppers in Adobo sauce

Preparation

Heat oil and saute onions, chiles, garlic, chili pwd., cornstarch, oregano, cumin, salt and pepper. Saute for 2 to 3 min. Add remaining ingred. and cook on med heat for 3 to 5 min. Reduce heat and simmer 4 to 5 min. Adjust salt and pepper to taste
