Ingredients

1 teaspoon Vanilla

2 cups Whole milk

1 cup Heavy cream

2/3 cup Xylitol (Granular, similar to sugar)

10 Large egg yolks

2 Green and Black, 85 % cacao chocolate bars, 3 1/2 ounce each

Preparation

Put oven rack in middle position, and heat oven to 350 degrees F

Place a wire grid on stovetop

To a 4 quart pot, add the milk, cream, vanilla and xylitol

Adjust heat to medium high and bring to just beginning to boil, stir occasionally

Meanwhile, place 12 ramikins in a rectangular oven proof baking dish

Add the chocolate to the mxture on the stove and stir until boiling has resumed

Remove pot from stove and set in a larger conainer contianing ice cubes, allowing the mixture to partially cool

Add the yolks to the mixture and using an immersion beater, mix until yolks are thoroughly mixed

Add some hot water to the baking dish containg the ramikins

Now pour the chocolate mixture into each ramekin using a large measuring cup.

Place the baking dish containg the ramekins into the oven

Bake for about 55 minutes until set. Remove and cool.
