Ingredients

3 cups Pumpkin Purée

2 Eggs

2 teaspoon Vanilla

1.5 cup Orange Juice, Low

1 tablespoon Ginger, Fresh Minced

4 cups Whole Oats, Bob’s Red Mill

1 cup Coconut, Flaked, Unsweetened

1/2 cup Pecan pieces

1/2 cup Cranberries, Dried, Low Sugar

2 teaspoon Cinnamon

1 teaspoons Turmeric

2 tablespoons Maple Syrup

1 teaspoon Nutmeg, fresh grated

1 teaspoons Baking Soda

1 teaspoons Baking Powder

3/4 teaspoon Salt

3 scoops Trutein Protien Powder, pumpkin flavor

Preparation

Beat eggs, then add remaining wet ingredients including minced ginger

Add dry ingredients to the wet ingredients, except pecans and cranberries

Allow mixture to rest for 30 minutes. Preheat oven to 350 degrees

Stir in cranberries and pecans so they are evenly distributed through the batter

Spray non-stick oil in (2) 12 muffin tins, distribute 1/4 batter in each cup

Bake 30 minutes, rotate muffins half way through baking. Allow to cool, and muffins will easily tumblr out of the tins
