Ingredients

1 1/4 cups sugar

1 stick unsalted butter

2 large eggs

1 tsp. baking soda

1/4 tsp. salt

1/4 cup sour cream or Greek yogurt

1 cup mashed bananas, ripe to very ripe

1 1/2 cups flour

1 tsp. vanilla extract

Preparation

Preheat oven to 400°F. Butter 9" bread pan very well.

Cream butter with sugar. If using an electric stand mixer, use the paddle attachment. Add eggs one at a time. Add sour cream or yogurt and vanilla until blended together. Add bananas and stir until just mixed.

Sift flour, baking soda and salt together. Add dry ingredients to wet ingredients in mixer and beat until very well mixed.

Pour batter into 9 inch bread pan and place on the center rack of the oven. Bake for 50 to 55 minutes. Banana bread is done when a toothpick comes out clean.

Let cool in pan on rack for 20 minutes before serving.
