Ingredients

1 Hambone with some ham on it

4 quarts Water

2 cups Dried white beans

3 Beets, sliced

2 Parsnips, sliced

4 Carrots, sliced

3 Purple Potatoes, sliced

2 Yellow squash, sliced

2 Zucchini, sliced

2 Sweet potatoes, sliced

2 tablespoons Garlic, minced

2 teaspoons Oregano

2 teaspoons Dill

2 teaspoons Salt

1 teaspoon Pepper

1 cup Sour Cream

Preparation

  1. Place hambone in crock pot with water. Cook overnight on low until ham falls off bone.

  2. Remove bone and cool. Add dried beans. Cook 8-12 hours on low.

  3. Add all the vegetables and cook on high 2 hours, until vegetables very soft.

  4. Grab your potato masher and mash all the vegetables and beans you can find.

  5. Add garlic, oregano, dill, salt, and pepper. Stir. Let heat another 20 minutes.

  6. Serve with a dollop of sour cream. Call it “Italian something because it has oregano.”
