Ingredients
1 1/2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon soda
1/2 cup sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup oatmeal
1 egg, beaten
2 tablespoons melted butter
Water
Juice of 1 orange
1 cup raisins
Preparation
- Preheat oven to 350 degrees
- Sift together flour, baking powder, soda, sugar, salt and cinnamon.
- Stir in oatmeal, egg and shortening.
- Add enough water to the orange juice to make one cup of liquid and add to the flour mixture, blending well.
- Turn half of the batter into a greased 8 X 4 inch loaf pan.
- Sprinkle the raisins over the batter and cover with the remaining batter.
- Bake at 350 degrees for 1 hour or until a toothpick put in the center comes out clean. You may need to cover the loaf with foil if the top is getting too dark so keep a watch on it. Cool.
