Ingredients
28 ounces Tomato sauce
1 tablespoon Garlic Powder
1 tablespoon Onion Powder
1 tablespoon Cumin
2 tablespoons Chili Powder
1 tablespoon Sugar
1.5 pounds Ground Chuck
1 tablespoon Adobo Seasoning
1 Onion Chopped
1 can Black Beans, drained and rinsed
1 cup Red Sauce
1 Shallot, minced
2 Roma Tomatoes, chopped
1 cup Romaine Lettuce, finely chopped
2 cups Mexican Cheese, shredded, divided
5 Flour tortillas, large
5 Green onions, chopped
1 Sour Cream
1 Guacamole
Preparation
Combine the first 6 ingredients to make the Red Sauce. Simmer over medium-low heat for 20-30 minuter
Brown the meat with the onion, drain and season with the Adobo. Add the Black beans and 1 cup of the Red Sauce. Simmer for 5-10 minutes.
Oil a 9x13" baking dish. Spread 1 cup of the Red Sauce in the bottom of the dish. Warm the tortillas, divide the lettuce, tomatoes, shallots, cheese and meat mixture between 5 tortillas. Roll up as burritos and place in prepared baking dish. Cover with the remaining Red Sauce, 1 cup of shredded cheese and green onions.
Bake at 350 degrees for 20 minutes.
Serve with Sour Cream and Guacamole.
