Ingredients
2.5 cups Water
2 tablespoons Unsalted Butter
10 ounces Spinach - Chopped, Frozen
7 ounces Boxed Commercially Prepared New Orleans Style Black Beans and Rice (unprepared)
1 packet Commercially Prepared Taco Seasoning
15 ounces Canned Sweet Corn
4 pieces Eggs, Beaten
Preparation
Bring water to boil and add spinach and butter.
Bring back up to boil and stir in the black bean and rice mixture and taco seasoning.
Bring back to boil and simmer for 16 minutes stiring at about the 8 minute mark.
Stir in corn and eggs and cover pot.
Return to boil and simmer an additional 8 minutes stirring occasionally.
Remove from heat and allow to cool slightly. Serve warm.
