Ingredients
2-1/4 cups flour
2 cups sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon grated lemon peel, if desired
1 teaspoon vanilla
1 cup butter or margarine – softened
8 oz pineapple or mandarin orange yogurt or
sour cream
3 each eggs
GLAZE frosting
1 cup powdered sugar
1 to 2 Tblspns lemon juice
Preparation
Grease and flour bundt or tube pan. Preheat oven to 325*F.
Combine all ingredients in large mixing bowl. Blend at low speed. Beat 3 minutes at medium speed. Pour into prepared pan.
Bake at 325*F for 60-70 minutes until top of cake springs back when lightly touched in center.
Cool 15 minutes in pan; remove and cool completely.
GLAZE: Combine powdered sugar and lemon juice.
