Ingredients
2 bag Three Bridges Organic Fettuccine
1 cup Sundried tomatoes, air dried (not oil packed) thinly sliced
1 cup Goat Cheese
1/4 cup Olive Oil
4 cloves Garlic (minced)
1 teaspoon Thyme (minced)
1/4 teaspoon Red Pepper Chili Flakes
1 pinch Salt & Pepper
Preparation
Cook the Three Bridges Organic Fettuccini according to package directions. Reserve 1/2 cup of the pasta cooking water and while hot pour over the sundried tomato slices and let them get soft.
Heat a large sauté pan over medium heat, add in the olive oil, garlic, thyme and red pepper chili flakes. Cook for 30 seconds until fragrant, stirring constantly.
Add in the goat cheese and the sundried tomato with the water and stir until cheese is melted and creamy.
Add in the cooked Three Bridges Organic Fettuccini and toss to combine and evenly coat the pasta in the sauce.
Season with salt and freshly ground black pepper to taste
Divide evenly into 4 dishes.
