Ingredients

1 cup uncooked orzo pasta

2 packages (13 ounces) fully cooked smoked hardwood chicken sausage

3 teaspoons olive oil, divided

1 small onion, chopped

3 cloves garlic, minced

1/4 cup chicken broth

1 can (14.5 ounces) petite diced tomatoes

2 tablespoons fresh parsley, minced

1/2 teaspoon dried oregano

1/2 teaspoon dried or fresh basil

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon pepper

1 cup feta cheese, crumbled

Preparation

Cook pasta according to package directions.

Heat 2 teaspoons olive oil in a large skillet on medium heat. Brown the sausage. Set aside and keep warm.

In the same pan, saute onion in remaining oil (if needed) until tender. Add garlic and broth; cook 1 minute longer, stirring to loosen browned bits from pan.

Stir in the tomatoes, oregano, basil, pepper flakes and pepper, cook for a few minutes.

Remove from the heat and stir in the orzo, sausage and feta.
