Ingredients
chicken breasts - cooked and shredded - can also use pork or beef
can of crushed tomatoes
can of lima beans
can of corn
chopped onion
diced potatoes
chopped carrots
chopped celery
can add other veggies like squash and spinach
chicken broth
salt, pepper, bay leaves
Preparation
Add lima beans, corn, onion, potatoes, carrots, and celery in equal parts to a large saucepan. Add the crushed tomatoes, then chicken broth until the veggies are covered, add bay leaves. Bring to boil then reduce heat and simmer, covered, for 1-2 hours until veggies are tender. Adjust salt and pepper. Add chicken and serve.
