Potato Cauliflower Mash Recipe
Ingredients 1 lb russet potatoes, peeled and cut into 1" chunks 1 lb cauliflower florets ½ c low-fat buttermilk Preparation COVER potatoes and cauliflower with 2" of cold water in large saucepan and bring to a boil. Simmer until tender, about 15 minutes. DRAIN and return to pan. Mash with buttermilk and season to taste with salt and black pepper. Cover and keep warm.
